Cooking Pride
So we’ve been making an effort to eat better for a while now and as part of that we are trying lots of new recipes. I really do enjoy cooking so this is a lot of fun for me. It’s just making the time to actually cook that can be the hard part with 3 little kids. We also found a website that is essentially a social networking site for those who love to cook. It has a ton of recipes and unique ways of searching for recipes (by taste, ingredient, etc) and we’ve had fun picking out new things to try.
Just a few days ago We grilled some salmon that turned out incredibly well. So well I had to take a picture.
I believe this was my best grilling of fish ever. We were quite sad when it was all gone. A bit of fun for me was the recipe didn’t yet have a picture on the website so I was able to upload the picture of my perfect (IMHO) salmon :)
The recipe is quite simple and here it is:
Salmon (either 2 thicker fillets that can be butterflied or 2 regular fillets that are nice and wide and be folded in half)
2 cloves of garlic peeled and minced
4 tbsp softened cream cheese
4 stalks of fresh cilantro chopped up
1 tsp kosher salt
1.) In a small bowl mix together the cream cheese, cilantro and garlic.
2.) Either butterfly the fillets or if using thin/wide fillets make a cut down the middle about 2/3 of the way through the fillet so it can easily be folded over.
3.) Spread the cream cheese mixture onto the fish and fold it up (cream cheese in the middle).
4.) On a hot grill (can only hold hand over for 2 seconds at most) that has been brushed with vegetable oil grill the filets about 6 minutes on each side (keep a close eye on the fish, you’ll see when it cooks through the side, you may need more or less time depending on the thickness of the fillets).
5.) Sprinkle the fillets with kosher salt while grilling (the jewels).
That’s it, so long as your grill is clean and you brushed on oil sticking shouldn’t be any problem at all.
